Cardamom, Green Pods

Cardamom is a pod spice in the ginger family that is commonly used in Indian cuisine.  It has a complex flavor profile with notes of citrus, ginger, sage, and exotic spice that is bright and warm.   

Cardamom has earned the nickname "The Queen of Spices" and is the third most expensive spice in the world with only Saffron and Vanilla being more expensive.  These are whole pods which are typically toasted to extract flavor, then ground or used whole.
