melipona-bee-honey-from-mexico
Melipona Bee Honey from Mexico

The vast majority of the world's vanilla beans are hand-pollinated by dedicated farmers. This is because, while the vanilla orchid is able to grow in almost all tropical regions on the planet, the tiny bee that can pollinate the flowers only lives in Central America. This amazing little creature is called the Melipona Bee, a stingless, honey-producing friend to the vanilla world.

We have procured some honey from Melipona Bees in Veracruz, Mexico. This honey has a lower viscosity (runnier, more liquid) than the honey most of us are familiar with, and it has a tangy, sweet-and-sour like taste. It's also loaded with antimicrobials and antioxidants and, in Latin America, is prized for its medicinal uses. We think it has that classic, distinctive honey taste, with strong fruity flavors, as well as an acidic note reminiscent of apple cider vinegar. While we all enjoyed a small taste test off a spoon, we loved it most on a piece of buttered toast. We also suggest adding it to drinks like lemon tea, making it into homemade cough drops, or attempting traditional Aztec drinking chocolate!

Sold in small, 2-fluid ounce glass bottles.
