
All-The-Good-Stuff Cookies
Are you like me and love to load your cookies will all your favorite mix-ins? Then this is the recipe for you! Choose whatever you want to add in: chocolate chips, M&Ms, raisins, chopped nuts, pretzel pieces, or go wild with some of Grandpa Fifield's suggestions! (be warned, he likes to tease grandkids by suggesting onions, olives, or a shrubbery.)
- 1 1/2 c. sugar
- 2 c. brown sugar
- 1 1/2 cup (3 sticks) butter, softened
- 1/2 cup shortening OR cooked and pureed lentils
- 2 Tbsp. vanilla
- 3 eggs
- 4 1/2 c. flour
- 3 c. rolled oats (measure first and chop in blender)
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 6 c. mix-ins (chocolate chips, dried fruit, nuts, M&M's, Reese's Pieces, etc.)
Cream together sugars, butter, shortening (or pureed lentils, or if you don't want either, increase butter to two cups) vanilla, and eggs. Mix together flour, blended oats, salt and baking soda. Add to creamed mixture. Mix in chocolate chips and other add-ins. Bake at 350°F for 10 minutes (do not overbake) and let sit on cookie sheet for 5-6 minutes before moving to a cooling surface.
