
Apple Bottom Biscuits
Imagine this: sweet, sticky apples, topped with warm, fluffy biscuit dumplings, and drizzled with a decadent vanilla bean glaze. Yep, it's apple season for sure! This is the perfect dish for Sunday brunch!
Caramel Apple Layer
- ¼ c. butter

6-8 large, tart apples (like Granny Smith or McIntosh

½ c. brown sugar
- ¼ c. heavy whipping cream
- 1 TBSP vanilla paste
Peel, core, and slice the apples. In a large cast iron skillet or an oven-safe frying pan, melt the butter. Add the apples. Sprinkle with salt and brown sugar and vanilla paste. Sautee apples until juice begins rendering and they begin to soften and boil. Add the cream. Boil for 2-5 minutes until it thickens to your liking.
Note: this makes a wonderful dish by itself, or as an ice-cream or crepe topping, if you don’t want to add the biscuits.

Biscuit topping
- 1 ¾ c. flour

¼ c. ground flax or wheat bran, optional

2 TBSP sugar

1 TBSP baking powder

1 tsp. cinnamon

¼ tsp. salt

½ c. butter
- 2/3 c. milk
- 1 tsp vanilla extract
Preheat oven to 400 °F.
In a large bowl, mix together flour, flax (if using), sugar, baking powder, cinnamon, and salt.
Cut in the butter until the size of peas. Pour in the 2/3 cup milk and vanilla extract all at once. Stir with a fork just until mixed. Turn the heat off the apple mixture and drop the biscuits on top of the apples in large spoonfuls. Don’t spread the dough out, but try to cover all the apples.
Bake at 400 °F for 12 minutes.
Glaze

- 2-3 TBSP orange juice or milk
- caviar of 1 vanilla bean
Mix together, adding juice a little at a time until desired consistency is reached. Drizzle glaze over warm Apple Bottom Biscuits when they come out of the oven.
