Apple Cinnamon Pecan Fluff Salad

What self-respecting midwestern girlie could attend a potluck without some fluffy, sweet, crunchy, and delightful salad? Not this one! Enhanced by decadent Ceylon Cinnamon paste and a kiss of brown sugar, this fruit salad is the perfect dish to inspire the question, "Is it a salad? Is it dessert? Do I really care when it's this delicious?" 

  • 4 ounces cream cheese
  • 2 TBSP Cinnamon Vanilla Paste or 1 TBSP vanilla paste plus 1 tsp ground Ceylon Cinnamon
  • 1/4 c. brown sugar
  • 1/2 c. heavy whipping cream
  • 2 large Granny Smith Apples, or 3 small 
  • 1 cup pecans

In a large mixing bowl, soften the cream cheese by warming it in the microwave for 15 seconds. Beat with an electric mixer for a moment until it is smooth. Add the cinnamon vanilla paste and the brown sugar, and beat until smooth again. Add the whipping cream and whip until medium stiff peaks form. 

Chop or grate the apples. Chop the pecans. Fold apples and pecans into the whipped cream mixture. Chill and serve. 

Other good mix-ins: chopped pretzels, gingersnaps or snickerdoodle pieces, raisins, pralines, chia seeds, peanuts, or chopped Snickers candy bars.
