Buttermilk Syrup

  • 1 cup buttermilk
  • 10 TBSP butter (1 1/4 sticks)
  • 2 1/2 cups sugar
  • 2 TBSP corn syrup (optional, to prevent crystallization) 
  • 2 1/2 tsp. vanilla extract
  • caviar of 1 vanilla bean
  • 1/2 tsp. baking soda
Heat buttermilk, butter, sugar, corn syrup, and vanilla to a rolling boil. Remove from heat. Add baking soda. It will foam up significantly, so use a large pot. Serve warm and frothy. Makes about 4 cups. You can make a half batch easily. Variations include using coconut extract, or making caramel buttermilk syrup by replacing half the sugar with brown sugar.
