Classic Coleslaw
All our Flash Sale February featured recipes will be components of an incredible meal, just as each vanilla bean is unique but works together to add flavor and delight to everything it touches! India V. planifolia is classic and rich, making it a perfect option for Vanilla Paste, which elevates this crunchy, essential barbecue side dish.
- 1/2 head of cabbage, shredded finely
- 1-2 carrots, shredded
- 1 apple, diced or shredded
- 1/2 cup golden raisins (optional)
- 1/2 cup mayonnaise
- 2 TBSP red wine vinegar
- 2 TBSP vanilla sugar
- 1 TBSP vanilla paste
- 1 tsp salt
- 1 tsp pepper (Wild Madagascar Peppercorns are particularly good!)
Wash, peel, and shred the cabbage and carrot. You can experiment with the amounts and try red cabbage if you like! Dice or shred the apple. In a large bowl, mix together the mayonnaise, vinegar, vanilla sugar, vanilla paste, salt and pepper. Whisk the sauce together, then add all the vegetables and fruits and toss to combine. Serve cold.
Variation: try using plain or lemon yogurt instead of the mayonnaise! Or, add a tablespoon or two of dijon mustard.
