Crepes
Some things in life are inherently delightful. Crepes are one of them. Whether you top them with sweet vanilla bean whipped cream or go a more savory route, they are always welcome!
- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 1 cup flour
- 3 TBSP. melted butter
- 2 1/2 TBSP sugar
- 1 tsp. vanilla extract
In a blender, combine all ingredients and blend until smooth. Let batter rest in the refrigerator for 1 hour or overnight, unless the kids' complaining gets completely out of hand. This rest period makes the crepes less likely to tear during the cooking.
To cook: heat a small non-stick frying pan over medium low heat. Add butter to coat. Pour a small amount of batter in and swirl to thinly coat the bottom of the pan. Cook for about 30 seconds, until the edges begin to crisp and turn lacey, and then flip. We like ours with lemon juice and vanilla sugar, orange syrup, yogurt, fresh fruit, powdered sugar, lemon or vanilla curd. Ceylon Cinnamon vanilla sugar is also a spectacular topping!
Savory Variation: omit sugar and vanilla; add 1/4 tsp. salt and 1/4 cup freshly chopped herbs (or 1 TBSP dry) such as rosemary or basil to the batter. Blend well so the herbs puree in the batter. Cook as before. Really yummy filled with sauteed onions and mushrooms and topped with a soft poached egg!
