Elephant Ear Loaded Spuds

We love how versatile potatoes are, and how versatile Elephant Ear Seasoning is. Load up your spuds with whatever you like best! This makes for a fun, quick dinner that everyone is sure to enjoy, as they can add their own toppings, as much or as little as they want!

  • Russet potatoes, 1/2 to 1 potato per serving
  • 1-2 TBSP olive oil
  • 1-2 tsp Elephant Ear Seasoning Salt per serving
  • Bacon, 1-2 slices per serving
  • Cheese, 1 ounce per serving
  • Other optional toppings: chopped chives, sour cream, avocado, ranch dressing, mayonnaise, ketchup, baked beans, chili, pulled pork, fried egg, steamed broccoli, whatever sounds good to you!

Preheat oven to 400°F. Scrub and slice potatoes in 1/4 inch slices. Drizzle a baking sheet with olive oil, and drizzle the potato slices with olive oil. Sprinkle both sides generously with Elephant Ear Seasoning Salt. Lay the potatoes out on the baking sheet, and bake for 20 minutes, flipping the potatoes at the 10 minute mark. Use the bake time to prep your toppings! Fry your bacon, shred cheese, warm up baked beans or chili, fry an egg, whatever sounds delicious to you. After the first 20 minute bake, test for tenderness. If the potatoes are easily pierced with a fork and are crispy brown on the outside, then proceed to the last steps. If they're still hard, give them another 5-10 minutes baking and check again.

Last steps: top each potato with cheese and bake for 5 minutes to melt the cheese. If you're adding bacon, add a few drops of bacon grease to the potato for extra goodness! When done, top with crispy bacon, finely chopped chives, a dollop of sour cream, a slice of avocado, or anything else that suits your fancy. Make it a meal!
