Fifield's Chocolate Zucchini Bread

This wholesome bread is loaded with fiber and veggies, but is is fudgy and decadent like chocolate cake! This the perfect way to use up extra zucchini! 

  • 3 beaten eggs
  • 3/4 c. cooking oil
  • 2 c. brown sugar
  • 2 c. pureed zucchini
  • 2 T. vanilla OR 3 T. chocolate vanilla paste
  • 3 c. whole wheat flour
  • 1 tsp. salt
  • 3/4 tsp. nutmeg
  • 1 T. cinnamon
  • 1/2 tsp. baking powder
  • 1 tsp. soda
  • 3 T. cocoa
  • 6 oz. chocolate chips (or 3 oz. chocolate chips and 3 oz cacao nibs)
  • 1 1/2 c. chopped walnuts or pecans (optional) 
Mix wet ingredients, add dry ingredients all at once. Bake in greased loaf pans at 350 degrees F for 1 hour. Makes about 2 medium sized loaves. Lining the pan with parchment paper before baking will help the loaves to come out perfectly. Even better the next day!
