
Microwave Vanilla Bean Cheesecake
Cheesecake is notoriously finicky, requires springform pans and water baths, and usually a lot of practice and expertise to get it right. Unless you use this super easy Microwave Cheesecake recipe! It's fast, delicious, and far more approachable than many "traditional" cheesecake recipes. Try adding fresh strawberries or other fruit at the end for a delightful summer treat!
Crust:
- 2 c. graham cracker crumbs (about 1 whole cellophane package
- 1/2 c. sugar (optional)
- 1/2 c. butter (1 stick)
- 1/2 tsp. cinnamon
In a microwave safe 13x9x2 pan, melt the butter. Combine with graham cracker crumbs, sugar, and cinnamon and pat firmly in the bottom of the pan. Cook in microwave 2 minutes.
Filling:
- 3 (8 oz) pkgs. softened cream cheese
- 5 eggs
- 1 c. sugar
- 1/2 tsp. vanilla extract
- Caviar of 1 vanilla bean
Beat cream cheese until smooth. Stir in eggs, one at a time. Mix in sugar and vanilla. Pour into crust. Bake in microwave for 15-17 minutes, until the center is just set (a little jiggle is ok, but no big waves). Turn every 4 minutes.
Topping:
- 2 1/2 c. sour cream
- 1/2 c. sugar
- 1 1/2 tsp. vanilla extract
- Caviar of 1 vanilla bean
Combine sour cream, sugar, and vanilla. Blend well. Pour mixture over cheesecake. Return to microwave and cook 1 minute 15 seconds.
Chill the cheesecake 4 hours or overnight. This is really good served with fresh fruit or your favorite fruit sauce, or whipped cream.
