Pecan Pie
A Fifield Family Favorite!
- 3 eggs
- 1 cup corn syrup or maple syrup
- 2/3 cup sugar
- 1/3 cup butter, melted
- 1 Tablespoon vanilla extract
- 1 1/2 cup pecan halves
- Pastry for Single-Crust Pie
In a mixing bowl, beat eggs lightly with a fork until combined. Stir in corn syrup, sugar, melted butter, and vanilla. Stir well. stir in pecan halves. Pour filling into a pastry lined pie plate. Cover the edges with foil. Bake at 350 degrees Fahrenheit for 25 minutes. Remove foil; bake 20-25 minutes more or until a knife inserted near the center comes out clean. Cool on a wire rack. Cover and chill to store. Makes 8 servings.
