Simple and Divine Fruit Salad

Summer is a time for simple, light, and delicious dishes that feature the fresh produce of the season. This fruit salad comes together in a snap, and can feature whatever fruit you have on hand! A Hawaii V. planifolia vanilla bean is particularly wonderful with this dish, since Hawaiian vanilla beans have a lovely honey aroma that is enhanced by the honey and lime in the sauce.

 
  • 8-12 cups fresh assorted fruit (we used apples, pears, grapes, pineapple, clementines, strawberries, blueberries, and raspberries)
  • Juice and zest of 1 fresh lime (about 2 tablespoons of juice)
  • 3 tablespoons honey
  • Caviar of 1 vanilla bean
  • 1 tsp vanilla extract
  • ¼ tsp vanilla salt 
Whisk your sauce ingredients together and pour over your fruit. Toss to combine. If you choose to use fruit that can brown easily, like bananas or peaches, add them right before serving. Fresh shredded mint is another wonderful option!
