Sparkle Toast
This quick and easy breakfast was given its name by my then-three-year-old daughter, thanks to its crunchy, glittery cinnamon and vanilla sugar topping!
· Bread
· Butter
· Cinnamon Vanilla Sugar:
o ½ cup white granulated sugar
o ½ cup brown sugar
o 2 TBSP fresh ground Ceylon Cinnamon
o 1 TBSP fine ground vanilla powder or 2 vanilla beans’ worth of caviar
Preheat your broiler. If you like extra crunchy toast, lay the bread slices out on a broiler-safe sheet pan, butter them if you like, and then toast for 1-3 minutes under the broiler until they are your desired level of darkness. Then, carefully flip the bread over, generously butter each slice, and spoon a thick layer of cinnamon vanilla sugar on top. Return to the broiler and watch very carefully, as it can burn quickly. Toast for 2-4 minutes, until the sugar is nicely bubbly and caramelized, and the bread is as toasted as you prefer. I usually skip the first toasting, because I like having a soft side of the bread and a crunchy side. My daughter who named this recipe prefers it to be nearly black around the edges and well-toasted on the back side too. Make it your own!
