Sweet Cornbread Cake
All our Flash Sale February featured recipes will be components of an incredible meal, just as each vanilla bean is unique but works together to add flavor and delight to everything it touches! This final side dish is a favorite in the Fifield family--a highly customizable sweet cornbread cake that is equally at home on the breakfast table or as an after-school snack. Enjoy it as-is, check out the variations, or brainstorm your own!
- 1 c. sifted flour
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 c. sugar
- 1/4 c. cornmeal
- 2 eggs, beaten
- 1 2/3 c. buttermilk
- 1/4 c. oil
- 1 tsp vanilla extract
Whisk dry ingredients together. *If adding mix-ins, toss them with a few tablespoons of the dry ingredients before folding in at the end.* In a separate bowl or measuring cup, combine eggs, buttermilk, oil, and vanilla. Add wet to dry and whisk just until blended, no longer. Bake at 400°F in a 9x9 pan for 30 minutes; 9 x 13 for 20 minutes, or muffin cups for 15 minutes.

- Cheddar Jalapeño (pictured above)
Mix in 1 cup cheddar cheese, either shredded or cut into small cubes, and 1 jalapeño, seeded and diced, at the *asterisked point in the instructions. 1/4 cup pickled jalapeños can also be used. Don't omit the vanilla!
- Blueberry
Mix in 1 cup blueberries, either fresh or frozen, and 1 TBSP. orange zest at the *asterisked point in the instructions.
- Whole Corn
Mix in 1 cup frozen corn kernels at the *asterisked point in the instructions. Bake in muffin cups for extra fun!
- I-forgot-to-get-buttermilk
Instead of buttermilk, use 1 cup regular milk mixed with 2/3 cup sour cream or plain Greek yogurt.
- Gluten-Free
Replace 1 c. flour with 1 1/4 c. GF flour mix. Add 1 tsp. Xanthan gum. Dust pan with cornmeal.

Whipped Vanilla Honey Butter
- 1/2 cup softened butter
- 1/4 cup honey
- caviar of 1 vanilla bean or 1 tsp vanilla paste
- 1 TBSP powdered sugar
Put everything in a bowl and whisk vigorously until smooth and airy.
