Waffles (both GF and non-GF versions)

Waffles

  • 2 1/2 cups flour
  • 2 TBSP sugar
  • 4 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 6 eggs, slightly beaten
  • 2 cups yogurt (plain or vanilla)
  • 1/4 cup oil
  • 1 cup water
  • 1 tsp. vanilla extract
Combine dry ingredients in a bowl. Mix wet ingredients in a separate container. Add wet ingredients to dry and mix until just blended. Bake in preheated and lightly greased waffle iron 4 1/2 minutes. 

For Gluten-free waffles, replace the flour with 2 1/2 cups of GF flour mix and add 1 tsp. xanthan gum. Our favorite combination is 2 cups rice flour, 2/3 cups potato starch, and 1/3 cup tapioca flour. 

Particularly good with Buttermilk Syrup!
