Ever since 12 year-old Edmond Albius developed the hand-pollination technique, vanilla production has been a critical piece of Réunion’s economy, so much so that vanilla vines twist around their unofficial coat of arms.  It is clear that the people of Réunion take great pride in this special product. These V. planifolia vanilla beans are robust, rich vanilla with overtones of candied pecans, browned butter, and chocolate hazelnut spread.

To save on packaging, beans purchased by the ounce will be shipped in a selection of one or two-ounce vacuum bags to make up the total number of ounces ordered.

My first experience with Réunion beans

I was intrigued by the description of these beans on the Indri web site, and decided I wanted to give them a go in two forms of extract. 5 of my 8 ounces went into Ocean vodka for a double fold, everyday extract. The other 3 ounces went into a triple fold extract with Woodford reserve bourbon which I intend to be used in pecan and pumpkin pies. I expect both of these will need a cure time of 2 years, but both jars are already giving lovely, deep, complex aromas. The description of the beans on the Indri site is very accurate. I think these extracts are going to be gems in my vanilla collection.
